Fruit & Almond Energy Bar Recipe

One of my summer goals has been to up my running milage and to trade out some of the less nourishing snacks that creep in when I’m unprepared. So, this recipe meets all my summer criteria: minimal ingredients, adaptagens to help balance out my hormones (even in the heat), portable and quick to prepare!

Fruit & Almond Energy Bar Recipe:
1 c. shredded, unsweetened coconut
1 c. Natural sliced almonds, toasted in oven for 10 min. at 350.
1 c. Fruit fusion Superberry blast organic Made in Nature Snacks
1 c. pitted dates
1- 2 Tbls. HANAH ONE
1 Tbls. ashwaganda

Toast the almonds. Blend everything together in a food processor. Add 1 Tbls. water while blending so the mixture will hold together. Pour into a buttered 8x8in dark pan. Refrigerate 1 hr. cut and store in refrigerator for up to one week.

Note: To save on waste, I like to package cut sliced energy bars in Bees Wrap.
